(Eyeballed) RECIPE FOR FLATBREAD DORM-STYLE:
Ingredients...*
... flour
... water
... vegetable or olive oil
... salt
... pepper or other dried seasonings
Process...
- Mound some flour on a clean flat work space and create a well in the middle of it
- Sprinkle salt and other seasoning(s) of choice evenly across the flour
- Add a little bit of water to the well, and mix in a bit of flour from the edge of the well so that the water starts to thicken
- Add a wee bit of the oil to the middle and mix in more flour
- Repeat steps #3 and #4 until the flour and liquid mixture can be rolled as a ball without sticking to your hand or crumbling into dust
- Knead this ball of dough for about 10 minutes until it is slightly elastic
- Leave the ball under plastic wrap or an overturned bowl to rest at least another 10 minutes
- In the meantime, preheat the oven to about 350°F (176°C)
- If need be, divide the dough into more manageable pieces to roll flat to about 1/8 in. (1/20 cm)
- Bake on a lightly oiled surface in the oven, about 5 min. per side**
- Finish each flatbread with a few seconds on direct high heat on each side (like on the coils of a stove top or a smoking hot pan)
